Warm Couscous Salad with Luffe

I had this on Christmas Day. It was quick and it was easy to make. The veggies are raw and just slightly heated. It is topped off with some black cumin seeds to give it that extra pound of healthy value.
- In a pan add in 1 cup of water, 1 teaspoon of clarified butter, salt and seasoning and bring to boil. After it comes to a soft boil turn off the heat and add in the couscous.
- Cover tight with a lid and allow to sit for 5 minutes. Remove the lid and with a fork, fluff up the couscous lightly.
- Heat up the bean sprouts in a pan and then set them aside. In a bowl add in the tomato, red pepper, green onion, luffe powder, sesame seeds and bean sprouts.
- Mix lightly.Add to the couscous and then top with some soy sauce. Place on a platter to serve and spritz with the olive oil and top with some chopped coriander.
